Cilantro, Parsley, Dill, Basil
Chopped up fresh and added on top, for any of these, is outstanding. You can really take a ‘meh’ meal and add some fresh herbs on top and change everything. Especially soups, but also sandwiches, quesadillas, salads, and more benefit from some fresh herbs.
The next step is sauces. And if herbs are the heroes of the dinner table, then sauces are the plot line. Each herb is the main ingredients to the best sauces (pestos, green sauces, chimmi churri, tzatziki).
Sometimes I let my meal planning be lead by the herb available, AKA what sauce I will be making. If I have basil, of course I want to make pesto (so pasta, chicken, etc). Or if I have dill, I can form a whole Mediterranean menu off of knowing that I will have the dill.
So, herbs can be an afterthought or the inspiration, either way they carry far more than their weight in flavor, freshness, and nutrition!
