Bok Choy and Cabbage
Bok Choy is technically a type of cabbage, but they are so different I don’t use them interchangeably. If anything, I use Bokchoy in recipes that call for chard, kale, or spinach. And then with cabbage, I usually DON’T have cabbage, so i’m swapping in kale or Swiss chard. But, in the magical moments I have either one, it is a great day.
For bokchoy, It is great steamed or added to soups at the very end. Christian likes to chop it up and saute it into literally anything he’s making. If bokchoy is in season, we are eating it!
For cabbage, I love adding it to salad, sauteing it with pork or ground beef and lots of spices, or fermenting it into saurkraut.
