Arugula, Greens Mixes, Lettuce Mix

Arugula, greens mixes (think baby tatsoi, baby mustards), and lettuce mix all come in a similar package and pack some really unique and delicious flavors. Below are some of my favorite ways to use them:

My flexible salad building blocks:

-Salad Dressing can be all you need to add for the most delicious salad! My favorite is this recipe, with substituting vinegar for lemon juice.

-Roasted veggies on top of fresh (uncooked greens): I take whatever roots are available (carrots, turnips, beets), slice them about 1/4 inch thick, add oil and spices, and roast at 425 for about 25 minutes, or until they are soft and maybe a little caramelized.

-Roasted nuts (this can be pecans, walnuts, macadamia nuts, peanuts, whatever!)

-Cheese (optional) -fresh mozzeralla, feta, goat cheese

-Fruit (seasonal) - cut up an orange, tangerine, strawberries, apples, pears, whatever is in season it will be delicious
